Corned Beef Quiche

This is an old recipe that goes back to when corned beef was free, but sadly is no more.


Ingredients
340g lean Corned Beef
1 Onion
3 eggs
250g/8oz very low fat cottage cheese
Freshly ground salt & pepper to taste.


Preparation
Peel and roughly cut up the Onion, open the Corned Beef and take off any white fat, cut the Corned Beef into slices and place onto a sheet of kitchen paper on a microwaveable plate.


Put the plate into the microwave (time depends on strength of microwave) and gently heat through,  the corned beef will soften and this will remove any excess fat, discard the kitchen paper. 


Pre-heat oven to 190ºC / 375ºF / Gas 5.


In a bowl, mix together the Corned Beef and the chopped onion, put into the base of flan dish and press down firmly with a spoon or fork.


Beat the eggs together and add the Cottage Cheese (as an extra taste you can add herbs at this stage if you prefer), season with the freshly ground salt and pepper and mix to combine.


Pour the mixture over the Corned Beef base and bake in the oven for 30 mins or until golden brown.


Serve hot or cold on its own or with a salad.

I love this recipe from the old days. Not slimming any more but this is great when keeping an eye on your weight & also a family favourite. I add sliced peppers & mushrooms on top for presentation.

The syns are only in the corned beef. Everything else is a free food on Extra Easy.
Princes reduced fat corned beef is 1.5 syns per 100g

I cook this using PRINCES LEAN CORNED BEEF [REDUCED FAT] which is 1.5 syns per 100g or 3 syns per can. I use 2 cans and the whole thing is only 6 syns and this serves 4 people making it 1.5 syns per serving.

I use five eggs instead of three. Mix it all up and add mushroom, and lean back bacon. Top with sliced tomatoes. And a sprinkling of low fat cheese. This makes a big one and I freeze portions left over for another day. Yum.

Its been 25 years since I did slimming world, but this recipe has stayed with me over all that time. It is so simple, adaptable (when not dieting) and delicious! I don't much like pastry so this is ideal and so easy to make. Loved by the whole family.

Regarding herbs, I use mixed herbs or italian mix herbs, or you could try fresh chives or tarragon.

Both my husband and I love this recipe, had a disaster with my book and this was one recipe that was ruined. Glad your still showing it. Don't need to slim thankfully neither does my husband so we add what we like.
