Ingredients
4 Chicken breasts
1 of Lemon
1 tspn Chilli flakes
3 tbspns fresh chopped parsley
Fry Light
Salt and freshly ground Black Pepper
Preparation
Remove any skin from the chicken breasts and place in a bowl, finely grate the lemon rind and squeeze the juice over the chicken breasts, add the chilli flakes and chopped parsley. Season to preferred taste and mix to combine all the ingredients. Cover bowl with clingfilm and leave to marinate in the fridge for 3-4 hours.
Too cook, spray a griddle or if you don't have one, a frying pan with Fry Light and cook the chicken breasts for 5 - 6 minutes on each side or until thoroughly cooked.
Serve on 4 warmed plates with a selection of vegetables such as baby carrots, broccoli or green beans.
